The tacos are exceptional. It’s also hard to beat $1.56 Taco Tuesday. They even had tacos for my friend with a 4 year old palate.
Overview
Tucked away on the bustling stretch of 9100 E US Hwy 40, Independence, MO 64055, United States, Mexican Corner 2 has become a local favorite that captures the true essence of homestyle Mexican cooking. From the moment you walk in, the aroma of sizzling fajitas, freshly made tortillas, and grilled peppers greets you like an old friend. The décor strikes a balance between rustic charm and cozy diner comfort, with vibrant colors, Mexican-inspired wall art, and friendly staff who seem to remember your order after just one visit.
What stands out most is how the restaurant feels less like a commercial eatery and more like stepping into someone’s kitchen where every dish has a story. I’ve eaten here multiple times, often after long workdays or weekend outings with friends, and the consistency in flavor and service always surprises me. Their menu, though familiar at first glance, carries a depth that only experience and tradition can provide. Whether it’s the soft chicken enchiladas drenched in rich mole sauce or the carne asada tacos perfectly seared and seasoned, each bite feels crafted with care.
During my last visit, I decided to try their combination plate-a generous serving of a beef taco, cheese enchilada, and rice and beans. The taco shell was crisp without being greasy, the beef well-seasoned and juicy, and the refried beans creamy with just the right salt balance. Their salsa, freshly blended with cilantro and roasted jalapeño, has that authentic kick many chain restaurants tend to miss. The staff shared that their salsas are made daily using locally sourced produce, a small detail that truly elevates the dining experience.
A good restaurant is more than just food-it’s the atmosphere and the connection it builds with its guests. One of the cooks, who’s been with the place for years, mentioned that the recipes come from his grandmother’s kitchen in Jalisco. That authenticity explains the unmistakable homemade flavor that runs through every dish. This isn’t fast food; it’s comfort food prepared with heart and heritage.
Reviews from other diners echo this sentiment, frequently praising both the generous portions and affordable prices. Many regulars also point out how the team treats everyone like family-whether you’re a local or just passing through Independence. Online reviews highlight dishes like the chimichangas and burritos, both of which have built a bit of a reputation for their size and flavor.
In terms of value, Mexican Corner 2 outperforms many of its competitors. According to data from Restaurant Business Online, more than 60% of diners today seek “authentic, freshly prepared meals” at reasonable prices, and this diner hits that mark perfectly. Its convenient location right off the highway makes it ideal for travelers looking for something more satisfying than another fast-food burger joint.
The restaurant’s commitment to freshness and community involvement also adds to its credibility. They often participate in local food events and support nearby suppliers, a choice that not only boosts the local economy but keeps their ingredients seasonal and flavorful. This attention to quality and integrity builds trust, and it’s clear that every detail-from how they source their meat to how they serve their margaritas-reflects that ethos.
If you appreciate simple, well-prepared Mexican cuisine that feels both traditional and welcoming, this spot delivers. Whether you come for the loaded nachos, the tangy tamales, or just to relax with a cold drink after work, you’ll likely find yourself planning your next visit before you even leave your table.

Came on their opening day! They have some of the best vegan food around. We normally go to the grandview location. So excited to have them in independence. Come support the kindest and tastiest food! They have a small amount of seating. We ordered the vegan soy asada pizza, tofu stick taco and 3 soy pastor tacos. Yum!
The soy asada enchiladas were delicious, and served with a good helping of beans and rice. The red sauce was subtle among the cheese and the toppings, but still tasty. The Tlacoyo was also delicious... The SO ordered it with the mushroom "Vegan Pork Rind" on top to try it, which was nicely cooked in a tasty sauce. The food was a little on the spicy side, but not too bad. The mild salsa was a solid medium+ heat with a pretty good kick. The hot salsa is very spicy, if you aren't accustomed to eating very spicy things it is probably on the hiccup inducing heat level. The food is delicious, a little on the fried street food side, less on the fresh raw guacamole and tomato side. The staff were very friendly and helpful. The new location is a "hole in the wall", appropriately named being in a building up on the corner on a wedge of land. We have tried their previous location and are excited to have a new one a little bit closer!
Decided to stop in for Taco Tuesday $1.56 street tacos. I tried chicken, while my husband tried pastor, steak and ground beef. They were all pretty good! We left with a steak chimichanga and a shrimp quesadilla. Tasty!
You might miss this place driving by, but it’s definitely worth the trip. Amazing service and a huge selection of both regular and vegan items. The birria ramen was outstanding.
This is my favorite Mexican restaurant hands down! A large amazing menu for omini diners and a two page vegan menu as well. Authentic old world flavors and the kindest, friendliest staff that has made great suggestions and broadened my favorites. Very causal dining atmosphere and limited seating. Taco Tuesdays are a must!
